Baked Apple Cider Donut Muffins

These muffins blend warm autumn spices with the sweet tang of apple cider, creating fluffy bites of joy ideal for breakfast or a cozy snack.

  • 1 cup apple cider
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda

  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • For the Sugar Coating:
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your muffin tin.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the apple cider, sugar, melted butter, eggs, and vanilla until combined.
  4. Gently fold the wet ingredients into the dry ingredients until just mixed.
  5. Fill each muffin cup about 2/3 full with batter.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Allow the muffins to cool for 5 minutes, then roll in brown sugar and cinnamon mixture.
  8. Serve warm and enjoy!

Notes

To avoid dry muffins, do not overbake. You can substitute half of the flour for whole wheat flour for a healthier twist.
