  • 1 wheel (8-10 oz) brie cheese
  • 1 sheet puff pastry, thawed
  • 2 tbsp honey
  • 1/4 cup chopped walnuts or pecans
  • 1/4 cup dried cranberries
  • 1 tbsp fresh rosemary, chopped
  • 1 egg (for egg wash)
  • 1 tbsp water (for egg wash)
  • Crackers or sliced baguette (for serving)

Instructions

  1. Prep oven: Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
  2. Prep brie: If desired, carefully slice off top rind of brie (optional). Place brie in center of puff pastry.
  3. Add toppings: Drizzle honey over brie, then top with nuts, cranberries, and rosemary.
  4. Wrap: Fold puff pastry up over brie, trimming excess if needed. Seal edges by pinching together.
  5. Egg wash: Whisk egg with water. Brush over puff pastry for golden finish.
  6. Bake: 20-25 minutes until pastry is golden brown.
  7. Rest: Let cool 5-10 minutes before serving (filling will be molten hot).
  8. Serve: Place on serving platter with crackers or bread. Drizzle with extra honey if desired.

Notes

  • Rind note: Brie rind is edible, but removing top helps toppings adhere.
  • Make ahead: Assemble (unbaked) up to 24 hours ahead; refrigerate.
  • Variations: Try fig jam + pistachios, or caramelized onions + thyme.
  • No puff pastry: Bake brie alone in small dish at 350°F for 15-20 minutes.
