Creamy Baked Feta Pasta with Boursin Cheese

A delightful and creamy pasta dish featuring baked Boursin cheese, sundried tomatoes, and spinach, perfect for any occasion.

  • 200g pasta (penne or rotini recommended)
  • 200g Boursin cheese (garlic & herb or original, room temperature)
  • 100g sundried tomatoes (packed in oil)
  • 150g fresh spinach
  • 2 tablespoons olive oil (extra virgin)
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine Boursin cheese, sundried tomatoes, and fresh spinach. Mash the cheese with a fork.
  3. Drizzle with olive oil and season with salt and black pepper.
  4. Bake for 20-25 minutes until the Boursin is bubbly and slightly golden on top.
  5. Meanwhile, cook the pasta according to package instructions until al dente.
  6. Drain the pasta and return it to the pot.
  7. Combine the pasta with the baked cheese mixture, tossing until coated.
  8. Serve warm, garnished with fresh herbs or grated cheese if desired.

Notes

For a light version, swap Boursin for low-fat cream cheese. Leftovers can be stored in the refrigerator for up to 3 days.
