Cheesy Baked Gnocchi with Broccoli

A comforting baked dish featuring chewy gnocchi, vibrant broccoli, and a luscious blend of cheeses, perfect for weeknight dinners or family gatherings.

  • 1 package of shelf-stable gnocchi
  • 2 cups of broccoli florets
  • 1 cup of shredded mozzarella cheese
  • 1 cup of ricotta cheese
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Italian seasoning (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the gnocchi according to the package instructions until they float to the surface (about 2-3 minutes). Drain well.
  3. In a large mixing bowl, combine the cooked gnocchi, broccoli florets, olive oil, salt, pepper, and Italian seasoning (if using). Mix well.
  4. Gently fold in the ricotta and half of the mozzarella cheese.
  5. Grease a 9×13 inch baking dish and pour in the gnocchi mixture. Spread evenly, then sprinkle remaining mozzarella and grated Parmesan on top.
  6. Bake for 20-25 minutes until the cheese is bubbly and golden.
  7. Let cool for a few minutes before serving.

Notes

Ensure ricotta is at room temperature for easier mixing. For an extra crispy top, broil for 1-2 minutes but watch carefully.
