Ultimate Baked Macaroni and Cheese

  • 8 ounces macaroni pasta (elbow or cavatappi)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/2 cup breadcrumbs (panko or seasoned)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot of salted boiling water, cook the macaroni according to the package directions until al dente, usually about 6-8 minutes. Drain and set aside.
  3. In a large pot, melt the butter over medium heat. Whisk in the flour and stir continuously for about a minute until bubbly and slightly golden.
  4. Gradually whisk in the milk, stirring constantly for 5-7 minutes until the sauce thickens and coats the back of a spoon.
  5. Lower the heat, then add the cheddar and mozzarella cheese, along with salt, pepper, garlic powder, and paprika. Stir until completely melted and creamy.
  6. Fold the cooked macaroni into the cheese sauce until well-coated.
  7. Pour the mixture into a greased baking dish and sprinkle breadcrumbs evenly on top.
  8. Bake for 25-30 minutes or until the top is golden brown and bubbly.
  9. Let cool for a few minutes before serving.
