Baked Mozzarella Chicken Roll Ups

A delightful twist on classic comfort food with tender chicken, rich ricotta, and fresh spinach wrapped in a crispy, golden breadcrumb crust.

Ingredients

  • 4 large skinless/boneless chicken breasts (cut in half lengthwise for a total of 8 thin pieces)
  • 1 cup whole wheat Italian-style bread crumbs
  • 6 tablespoons grated Parmesan cheese (divided)
  • 5 ounces fresh baby spinach
  • 1 tablespoon minced garlic
  • 1 tablespoon extra light olive oil
  • 1/2 cup part-skim ricotta cheese
  • 1 cup egg whites
  • 3 ounces fresh mozzarella cheese (thinly sliced into 8 pieces)
  • 2 cups of your favorite marinara sauce
  • Fresh basil for topping

Instructions

  1. Cut the chicken breasts in half lengthwise to create 8 thin pieces.
  2. In a mixing bowl, combine the bread crumbs and 2 tablespoons of grated Parmesan cheese. Set aside.
  3. Chop the spinach and sauté it in a skillet over medium heat with the minced garlic and olive oil for about 2-3 minutes until just barely wilted.
  4. In a separate bowl, mix the sautéed spinach with the ricotta cheese, the remaining Parmesan cheese, and 3 tablespoons of egg whites until well combined.
  5. Preheat your oven to 450°F (230°C) and spray a large baking dish with cooking spray.
  6. On a flat surface, lay a piece of chicken. Spoon a dollop of the ricotta-spinach mixture in the center and roll the chicken tightly, sealing the edges. Dip the entire roll-up in the remaining egg whites, then coat it in the breadcrumb mixture.
  7. Arrange the chicken roll-ups in the baking dish seam-side down.
  8. Pour 1 cup of marinara sauce around the chicken.
  9. Bake for 25 minutes, or until the chicken is cooked through and the tops are browned.
  10. Remove from the oven, spoon the remaining marinara sauce over each piece, top with mozzarella, and bake for an additional 3-5 minutes until the cheese is melty.
  11. Garnish with fresh basil and serve hot.

Notes

Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 2 months. They reheat well in the oven.
