Balsamic Glazed Chicken Skillet is a savory, one-pan meal featuring tender chicken breasts cooked with a sweet and tangy balsamic glaze, accompanied by vegetables like cherry tomatoes, onions, and fresh herbs. Perfect for a quick and elegant dinner.

Ingredients

– 4 boneless, skinless chicken breasts (about 6 oz each), pounded to even thickness

– 1 tablespoon olive oil

– 1 medium yellow onion, finely chopped

– 3-4 cloves garlic, minced

– 1/2 cup balsamic vinegar

– 1/4 cup chicken broth

– 2 tablespoons honey (or maple syrup)

– 1 tablespoon soy sauce (or tamari for a gluten-free option)

– 1 teaspoon dried thyme (or 1 tablespoon fresh)

– 1 pint cherry tomatoes, halved

– 2 large handfuls of fresh spinach (about 5 oz)

– Salt and freshly ground black pepper to taste

– Optional: 1 tablespoon fresh parsley, chopped

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds until fragrant.
  4. Add balsamic vinegar and honey, stirring to combine. Simmer for 2-3 minutes until the sauce slightly thickens.
  5. Return chicken to the skillet, along with cherry tomatoes, red onion, and thyme. Spoon the glaze over the chicken and vegetables.
  6. Cook for another 3-4 minutes, until vegetables are tender and the glaze coats the chicken.
  7. Garnish with fresh basil if desired and serve immediately.

Notes

  • For a thicker glaze, mix 1 tsp cornstarch with 1 tbsp water and add to the sauce.
  • Serve with mashed potatoes, quinoa, or crusty bread to soak up the glaze.
  • This dish can be made with chicken thighs for more flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
