Decadent Banana Bread Cake with Cream Cheese Frosting

  • 3 ripe bananas (mashed, about 1 ½ cups)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 large eggs (room temperature)
  • ½ cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line it with parchment paper.
  2. In a medium bowl, mash the ripe bananas until smooth. Set aside.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy—about 2-3 minutes.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas.
  6. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  7. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Store the cake in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. You can freeze it for up to 3 months.
