Heavenly Banana Cake

  • 3 ripe bananas, mashed
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup buttermilk
  • Frosting of your choice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
  2. Cream together the butter and sugar in a large bowl until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs one at a time, then add the mashed bananas and vanilla extract, mixing until just combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, mixing until just combined.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
  8. Cool the cake in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Frost with your choice of frosting before serving.

Notes

Ensure bananas are very ripe for maximum sweetness. Butter should be at room temperature before baking.
