Irresistibly Crunchy Bang Bang Salmon Bites

Delicious bite-sized salmon morsels coated in crispy panko and tossed in a spicy-sweet Bang Bang sauce, perfect for any occasion.

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).
  2. Toss salmon cubes with garlic powder, smoked paprika, salt, and black pepper.
  3. Coat salmon with olive oil or spray, then cover in panko breadcrumbs.
  4. For oven: Place salmon on a baking sheet and bake for 12-15 minutes until golden.
  5. For air fryer: Place salmon in a single layer and cook for 8-10 minutes, shaking halfway.
  6. Mix mayonnaise, sweet chili sauce, sriracha, honey, and lime juice to make Bang Bang sauce.
  7. Layer cooked rice, then top with salmon, cabbage, avocado, carrots, and green onions. Drizzle with Bang Bang sauce and garnish.

Notes

Ensure salmon is fresh for the best flavor. Use gluten-free panko if necessary.
