  • 1 lb Lean Ground Beef
  • 1 tbsp Vegetable Oil
  • 1 Yellow Onion (finely diced)
  • 3 cloves Garlic (minced)
  • 1 Green Cabbage (chopped)
  • 2 Carrots (quartered and sliced)
  • 6 cups Low-Sodium Beef Broth
  • 1 cup Tomato Sauce
  • 1 cup White Rice (uncooked)
  • 1 Bay Leaf
  • 2 tsp Brown Sugar
  • Fresh Parsley (chopped for garnish)

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Brown the beef, seasoning with salt and pepper, for 5-7 minutes.
  3. Add the onion and garlic, cooking until softened, about 3-4 minutes.
  4. Incorporate the cabbage and carrots, cooking for another 3-5 minutes.
  5. Pour in the tomato sauce and beef broth, stirring to combine.
  6. Add the rice, bay leaf, and brown sugar, bringing the mixture to a boil.
  7. Simmer uncovered for 25 minutes or until the rice is tender.
  8. Finish by removing the bay leaf and garnishing with parsley before serving.

Notes

For a thicker consistency, reduce the amount of broth used.
