Ingredients

1 lb ground beef

1 onion, diced

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

Salt and pepper to taste

2 cups frozen mixed vegetables

2 cups shredded cheddar cheese

4 cups frozen hash browns or potato puffs

Cooking spray or butter for greasing the dish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In skillet over medium heat, brown ground beef with onion and garlic. Drain excess fat.
  3. Stir in Worcestershire sauce, thyme, paprika, salt, and pepper. Remove from heat.
  4. In bowl, whisk together cheese soup, milk, and sour cream until smooth.
  5. Layer half the potatoes in baking dish. Top with half the beef mixture and half the cheese. Repeat layers.
  6. Pour soup mixture evenly over top. Cover with foil and bake 45 minutes.
  7. Mix breadcrumbs with melted butter. Uncover casserole, sprinkle with crumbs, and bake 15-20 more minutes until potatoes are tender.
  8. Let stand 10 minutes before serving. Garnish with parsley.
