Beef Burgundy

A classic French stew featuring tender beef slow-cooked in red wine with mushrooms, pearl onions, and aromatic herbs. Perfect for special occasions or cozy dinners.

    • 3 pounds beef brisket or chuck steak

    • 6 ounces bacon

    • 1 large carrot

    • 1 white onion

    • 6 garlic cloves

    • 3 cups red wine

    • Beef stock

    • Fresh thyme

    • Fresh parsley

    • 1 pound fresh mushrooms

    • Salt

    • Pepper

    • Flour

    • Tomato paste

    • Crushed bouillon

    • Butter

Instructions

Preheat oven to 325°F (160°C).,Cook bacon in Dutch oven until crispy. Remove, leave fat.,Season beef with salt/pepper. Brown in batches in bacon fat. Remove.,Sauté mushrooms, carrots, and onions until browned. Add garlic, cook 1 minute.,Stir in tomato paste and flour. Cook 2 minutes.,Deglaze with wine, scraping browned bits. Add stock, thyme, bay leaf, and beef/bacon.,Bring to simmer, cover, and braise in oven for 2.5-3 hours until beef is tender.,Skim fat if needed. Season to taste before serving.
