A perfectly tender and flavorful beef roast with rich gravy, slow-cooked to perfection with aromatic vegetables and herbs. This timeless Sunday dinner classic features a beautifully browned exterior and juicy, fork-tender interior.

  • 34 lb beef chuck roast or rump roast
  • 2 tbsp olive oil
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 cloves garlic, smashed
  • 2 large onions, quartered
  • 4 carrots, cut into 2-inch chunks
  • 3 celery stalks, cut into 2-inch chunks
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 2 tbsp flour (for gravy)
  • 2 tbsp butter (for gravy)

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Pat roast dry and season generously with salt, pepper, garlic powder, onion powder, thyme, and rosemary.
  3. Heat oil in large Dutch oven over medium-high heat. Sear roast on all sides until deeply browned (about 4 minutes per side). Remove and set aside.
  4. Add onions, carrots, celery, and garlic to pot. Cook 5 minutes until slightly softened.
  5. Stir in tomato paste, then deglaze with red wine (if using), scraping up browned bits.
  6. Add beef broth and bay leaves. Return roast to pot, fat side up.
  7. Cover and transfer to oven. Cook 3-4 hours until fork-tender (about 1 hour per pound).
  8. Remove roast and vegetables to platter. Tent with foil.
  9. For gravy: Melt butter in pot over medium heat. Whisk in flour and cook 1 minute. Gradually whisk in cooking liquid until thickened. Season to taste.
  10. Slice roast against the grain and serve with vegetables and gravy.

  • For best results, choose a well-marbled cut like chuck or rump
  • Can be made in slow cooker: Sear meat first, then cook on low 8 hours
  • Leftovers make excellent sandwiches or beef pot pie
