Beef Zucchini Noodle Stir Fry is a low-carb, healthy, and flavorful dish featuring tender strips of beef, spiralized zucchini noodles, and colorful vegetables tossed in a savory stir-fry sauce. Perfect for a quick and nutritious meal.

Ingredients

– 1.5 lbs Sirloin Steak (thinly sliced)

– 1 tablespoon Soy Sauce or Tamari

– 1 teaspoon Sesame Oil

– 1 teaspoon Cornstarch

– 1/2 cup Beef Broth

– 1/4 cup Soy Sauce or Coconut Aminos

– 2 tablespoons Honey or Maple Syrup

– 1 tablespoon Rice Vinegar

– 1 tablespoon Sesame Oil

– 4 cloves Garlic (minced)

– 1 tablespoon Ginger (freshly grated)

– 1 tablespoon Cornstarch

– 2 tablespoons Avocado Oil (or other high heat oil)

– 1 large head of Broccoli (cut into small florets)

– 1 Red Bell Pepper (thinly sliced)

– 4 medium Zucchini (about 2 lbs)

– Optional Garnishes: Toasted sesame seeds, sliced green onions, and fresh cilantro leaves

Instructions

  1. In a small bowl, mix soy sauce, oyster sauce (if using), sesame oil, cornstarch, and water to make the sauce. Set aside.
  2. Heat 1 tbsp vegetable oil in a large wok or skillet over high heat. Add beef and stir-fry for 2-3 minutes until browned. Remove and set aside.
  3. Add remaining 1 tbsp oil to the skillet. Add garlic and ginger, stir-fry for 30 seconds until fragrant.
  4. Add bell pepper, snap peas, and carrot. Stir-fry for 2-3 minutes until vegetables are crisp-tender.
  5. Add spiralized zucchini noodles and stir-fry for 1-2 minutes until just tender.
  6. Return beef to the skillet. Pour the sauce over and toss to combine. Cook for 1-2 minutes until the sauce thickens.
  7. Garnish with green onions and red pepper flakes if desired. Serve immediately.

Notes

  • For a gluten-free version, use tamari instead of soy sauce and ensure oyster sauce is gluten-free.
  • Do not overcook the zucchini noodles to maintain their texture.
  • Slice the beef against the grain for tenderness.
  • Add other vegetables like mushrooms or broccoli for variety.
