Irresistible Birria Tacos

Birria Tacos are a traditional Mexican dish featuring slow-braised beef, vibrant spices, and crispy corn tortillas, creating a comforting and flavorful experience.

  • 2 lbs beef chuck roast
  • 46 dried guajillo chiles
  • 23 dried ancho chiles
  • 1 large onion, quartered
  • 4 garlic cloves
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp black pepper
  • 23 cups beef broth
  • Corn tortillas
  • Oaxacan cheese (or mozzarella)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Prepare the Sauce: Remove stems and seeds from chiles, soak in hot water for 15 minutes. Blend with onion, garlic, cumin, oregano, black pepper, and 1 cup beef broth until smooth, then set aside.
  2. Sear the Beef: In a pot over medium-high heat, add oil and sear beef on all sides for 3-4 minutes until browned.
  3. Braise the Beef: Pour blended sauce over beef, add enough beef broth to cover, bring to simmer, cover, and braise for 3-4 hours until tender.
  4. Shred and Strain: Remove beef, shred with forks, and strain the consomé to remove solids.
  5. Assemble the Tacos: Heat a skillet, dip tortillas in warm consomé, fill with cheese and beef, fold, and fry until crispy.
  6. Serve: Plate tacos with consomé for dipping, garnish with cilantro and lime.

Notes

Store leftovers in airtight containers. The beef can be braised a day ahead and reheated in the consomé before serving.
