  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 cup Biscoff spread
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, granulated sugar, and Biscoff spread until smooth, about 2-3 minutes.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually blend the dry ingredients into the wet mixture until incorporated.
  6. Fold in the chocolate chips gently.
  7. Drop tablespoon-sized balls of dough onto ungreased baking sheets.
  8. Bake for 10-12 minutes, or until edges are lightly golden.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

For a twist, try using white chocolate or nut butter instead of Biscoff. Store cookies in an airtight container at room temperature for up to a week.
