Irresistibly Chewy Biscoff White Chocolate Chip Cookies

Deliciously chewy cookies combining Biscoff cookies and rich white chocolate chips for an indulgent treat.

  • 1 cup Biscoff cookies, crushed
  • 1/2 cup room temperature unsalted butter
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat together the room temperature butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Fold in the crushed Biscoff cookies and white chocolate chips.
  7. Drop dough onto a lined baking sheet and bake for 10-12 minutes until edges are golden brown.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. Freeze cookie dough for up to 3 months.
