Spumoni Biscotti

Deliciously colorful spumoni biscotti that blend flavors of almond, pistachios, cherries, and chocolate, perfect for holiday celebrations.

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1 cup pistachios, coarsely chopped
  • 1/2 cup dried cherries or cranberries, chopped
  • 1/2 cup chocolate chips or dark chocolate chunks
  • Food coloring (green and pink, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the almond extract.
  5. Gradually mix in the dry ingredients until just combined. Avoid overmixing.
  6. Gently fold in the pistachios, chopped cherries, and chocolate chips. If desired, divide the dough and add food coloring to half before mixing.
  7. On a floured surface, shape the dough into a log about 12 inches long and 2-3 inches wide, then flatten it slightly on the baking sheet.
  8. Bake for 25-30 minutes or until golden brown and firm to touch. Let cool for 10-15 minutes.
  9. Slice the log into 1-inch thick slices using a serrated knife.
  10. Place slices cut-side down back on the baking sheet and bake for an additional 15-20 minutes until crisp.
  11. Allow biscotti to cool completely on a wire rack before storing in an airtight container.

Notes

Store in an airtight container at room temperature for up to two weeks. Freeze for up to three months if needed.
