Black Pepper Chicken with Mushrooms

A savory dish combining tender chicken and earthy mushrooms, enhanced with a peppery sauce that delights the palate.

  • 4 boneless skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 2 cups sliced mushrooms
  • 2 cloves garlic, minced
  • 1 tablespoon freshly ground black pepper
  • ½ cup chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon cornstarch (optional)
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken on both sides with salt and ½ tablespoon black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the chicken and cook for 6-7 minutes per side until golden brown and cooked through.
  4. Remove the chicken from the skillet and cover loosely with foil.
  5. Add the sliced mushrooms to the same skillet and sauté for 4-5 minutes until softened.
  6. Stir in the minced garlic and cook for another minute until fragrant.
  7. Pour in the chicken broth, soy sauce, Worcestershire sauce, and remaining ½ tablespoon of black pepper. Stir and scrape up any browned bits from the pan.
  8. If desired, mix cornstarch with a little water and stir it into the sauce to thicken.
  9. Return the chicken to the skillet, spooning the sauce over it, and let it simmer for 2-3 minutes.
  10. Garnish with chopped parsley and serve over rice or mashed potatoes.

Notes

Ensure chicken is at room temperature before cooking for even results. Use fresh mushrooms for the best texture.
