Blackberry Crumble

Warm, bubbly blackberries under a golden oat crumble topping – the perfect balance of tart fruit and sweet, crunchy streusel. Serve with vanilla ice cream for the ultimate summer dessert!

  • For the Filling:
  • 5 cups (600g) fresh blackberries
  • 1/3 cup (65g) granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • For the Crumble:
  • 3/4 cup (95g) all-purpose flour
  • 3/4 cup (75g) old-fashioned oats
  • 1/2 cup (100g) packed brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup (113g) cold unsalted butter, cubed
  • 1/4 cup (30g) chopped pecans or walnuts (optional)

Instructions

  1. Prep: Preheat oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish.
  2. Make filling: Gently toss blackberries with sugar, cornstarch, lemon juice, zest, vanilla and salt. Pour into prepared dish.
  3. Make topping: In a bowl, mix flour, oats, brown sugar, cinnamon and salt. Cut in butter with pastry cutter until mixture resembles coarse crumbs. Stir in nuts if using.
  4. Assemble: Sprinkle topping evenly over berries, covering completely.
  5. Bake: 35-40 minutes until filling is bubbly and topping is golden brown.
  6. Cool: Let rest 15 minutes before serving to allow filling to thicken.

Notes

  • For frozen berries: Use without thawing, add 5 minutes to bake time
  • Gluten-free option: Use 1:1 GF flour and certified GF oats
  • Extra crisp topping: Broil 1-2 minutes at end (watch carefully!)
  • Make ahead: Prepare topping up to 3 days in advance, refrigerate
