Spicy Blackened Shrimp Stroganoff

A spirited twist on classic stroganoff, made with spicy blackened shrimp and a rich, creamy sauce over pasta.

  • 8 ounces pasta (fettuccine or egg noodles)
  • 1 pound shrimp (peeled and deveined)
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup mushrooms (sliced)
  • 1 cup heavy cream
  • 1 cup beef broth
  • Salt and pepper to taste
  • Fresh parsley (chopped for garnish)

Instructions

  1. Cook the pasta according to package instructions, usually about 8-10 minutes. Drain and set aside.
  2. In a bowl, toss the shrimp with Cajun seasoning until well-coated.
  3. In a large skillet, heat olive oil over medium-high heat and sear shrimp for 2-3 minutes per side until blackened and fully cooked. Remove and set aside.
  4. In the same skillet, sauté diced onion and minced garlic until softened, about 2 minutes.
  5. Add sliced mushrooms and cook until golden brown, about 5 minutes.
  6. Pour in beef broth, scraping up flavorful bits, and bring to a gentle simmer.
  7. Stir in heavy cream; season with salt and pepper, simmering until the sauce thickens (about 3-5 minutes).
  8. Add cooked pasta, tossing to coat.
  9. Return the blackened shrimp to the skillet, mixing gently.
  10. Serve hot, garnished with fresh parsley.

Notes

Pair with a crisp green salad and garlic bread for a complete meal. Will keep in refrigerator for up to 3 days.
