Irresistibly Delicious BLT Pasta Salad

A comforting twist on a classic summer dish, this BLT Pasta Salad combines smoky bacon, sweet cherry tomatoes, and crisp romaine lettuce in a creamy dressing.

Ingredients

  • 8 oz pasta (rotini or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked bacon, chopped
  • 1 cup romaine lettuce, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted water according to package instructions until al dente, about 8-10 minutes. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, bacon, and romaine lettuce.
  3. In a small bowl, whisk together mayonnaise, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad mixture and toss until well coated.
  5. Chill in the fridge for at least 30 minutes or serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For a make-ahead option, prepare the pasta a day before and add the dressing just before serving.
