Blueberry Chia Seed Pudding

A vibrant fusion of creamy almond milk, nutritious chia seeds, and sweet blueberries, perfect for a guilt-free indulgence.

Ingredients

Scale
  • 1/2 cup chia seeds
  • 2 cups almond milk (or milk of choice)
  • 1 cup blueberries (fresh or frozen)
  • 23 tablespoons honey or maple syrup (to taste)
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the chia seeds, almond milk, honey (or maple syrup), and vanilla extract. Stir well until the chia seeds are evenly dispersed.
  2. Let the mixture sit for about 10-15 minutes to allow the chia seeds to absorb the liquid and thicken.
  3. Stir again to break up any clumps that may have formed.
  4. Fold in the blueberries, saving a few for garnishing.
  5. Divide the mixture into jars or bowls, layering as desired.
  6. Refrigerate for at least 2 hours or overnight for the best results.
  7. Serve chilled, garnished with additional blueberries or toppings of your choice.

Notes

For the best blending experience, have your ingredients at room temperature.
