Blueberry Cottage Cheese Breakfast Bake

A nutritious and delicious breakfast bake featuring fluffy cottage cheese and fresh blueberries, perfect for busy mornings.

  • 1 cup cottage cheese
  • 2 cups fresh blueberries
  • 3 eggs
  • 1/4 cup milk
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Salt to taste
  • Cooking spray or butter for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Combine cottage cheese, eggs, milk, honey or maple syrup, and vanilla extract in a large bowl until smooth.
  3. Add rolled oats, blueberries, cinnamon, and a pinch of salt, gently folding everything together.
  4. Transfer the mixture to the greased baking dish, spreading it out evenly.
  5. Bake for 30-35 minutes until the top is lightly browned and a toothpick comes out clean.
  6. Cool for 5-10 minutes before slicing, then enjoy warm or chilled.

Notes

This bake can last in the fridge for up to 3 days or be frozen for up to 1 month. You can also prepare the mixture the night before and bake it in the morning.
