Irresistible Blueberry Delight

A creamy, no-bake dessert featuring layers of graham cracker crust, cream cheese filling, and blueberry topping.

  • 2 cups crushed graham crackers (about 14 large graham crackers)
  • 1/3 cup granulated sugar
  • 10 tablespoons butter, melted
  • 1 (8 oz) package cream cheese, softened
  • 1 cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1 (16 oz) tub Cool Whip, thawed and divided
  • 2 (21 oz) cans blueberry pie filling
  • Additional graham cracker crumbs for garnish (if desired)

Instructions

  1. Prepare the Graham Cracker Crust: In a medium bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand. Press this mixture evenly into the bottom of a 9 x 13-inch pan. Chill in the refrigerator for 30 minutes to set.
  2. Cream Cheese Layer: Using a stand or hand mixer, beat together the softened cream cheese, confectioners’ sugar, vanilla extract, and half of the Cool Whip until the mixture is smooth and creamy, about 2-3 minutes. Spread this mixture evenly over the chilled graham cracker crust.
  3. Add Blueberry Filling: Open the blueberry pie filling and carefully spread it evenly over the cream cheese layer.
  4. Top with Cool Whip: Gently spread the remaining Cool Whip over the blueberry layer and sprinkle additional graham cracker crumbs on top.
  5. Chill Before Serving: Refrigerate for at least 2 hours before serving. For the best flavors, let it chill overnight.

Notes

Best enjoyed fresh, but will keep in the refrigerator for up to 4 days. Can be prepared a day in advance.
