Irresistible Blueberry Lemon Bread with Lemon Glaze

  • 1/2 cup melted unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 1 cup fresh blueberries
  • 1 tablespoon lemon zest
  • 1 cup powdered sugar
  • 2 tablespoons freshly squeezed lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×4 inch loaf pan.
  2. In a bowl, beat together melted butter, granulated sugar, eggs, and vanilla extract until smooth.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Alternate mixing dry ingredients with milk into the wet mixture, starting and ending with dry ingredients.
  5. Toss blueberries in a little flour and fold them, along with lemon zest, into the batter.
  6. Pour the batter into the loaf pan and bake for 50-60 minutes.
  7. Allow the bread to cool for 40 minutes before removing it from the pan.
  8. For the glaze, whisk lemon juice and powdered sugar together and drizzle over the cooled bread.

Store at room temperature for up to 3 days or freeze for up to 3 months.
