Blueberry Oatmeal Bars

A comforting family favorite, these Blueberry Oatmeal Bars are filled with fresh blueberries and chewy oats, offering a healthier alternative to store-bought snacks.

  • ½ cup all-purpose flour (or 1:1 gluten-free flour blend for a gluten-free version)
  • 2 cups quick-cooking oats
  • ½ cup brown sugar (packed)
  • ¼ tsp salt
  • ¾ cup butter, melted and cooled
  • 2 cups fresh blueberries
  • ½ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8-inch square baking pan.
  2. Combine the oats, flour, brown sugar, and salt in a large bowl. Stir well until incorporated.
  3. Press half of the oat mixture into the bottom of the prepared pan to create a firm crust.
  4. Mix the fresh blueberries, lemon juice, sugar, and cornstarch in a separate bowl.
  5. Spread the blueberry mixture evenly over the crust and sprinkle the remaining oat crumble on top.
  6. Bake for 40-50 minutes, or until the filling is set and the topping is golden brown.
  7. Let the bars cool completely before slicing them into squares.

Notes

Store uneaten bars in an airtight container at room temperature for up to 3 days, or refrigerate for a week. They freeze beautifully for up to 3 months.
