Irresistibly Creamy Blueberry Popsicles

  • 1 cup blueberries (fresh or frozen)
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 cup plain Greek yogurt (full fat)

Instructions

  1. Blend the blueberry mixture by combining blueberries, maple syrup, and vanilla extract in a blender until smooth.
  2. Combine the blueberry puree with Greek yogurt in a large mixing bowl and stir gently.
  3. Fill the popsicle molds with the mixture, leaving space for expansion.
  4. Insert the popsicle sticks into the molds.
  5. Freeze for at least 4 hours or overnight.
  6. Unmold to serve by letting sit at room temperature for a few minutes or running warm water over the molds.

Notes

Store popsicles in an airtight container in the freezer for up to 2-3 weeks. For optimal freshness, wrap them individually.
