Blueberry Spinach Salad with Honey Balsamic Dressing

A fresh and vibrant salad featuring sweet blueberries, crunchy pecans, and a tangy honey balsamic dressing.

Ingredients

  • 3 cups fresh spinach
  • 1/2 cup pecans, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup fresh blueberries
  • 1 tbsp olive oil
  • 1 tbsp water
  • 3 tbsp honey
  • 2 tbsp balsamic vinegar

Instructions

  1. Rinse and dry spinach and blueberries. Chop pecans and crumble feta.
  2. In a large bowl, toss together spinach, blueberries, cranberries, pecans, and feta cheese.
  3. Add all dressing ingredients to a mason jar, close tightly, and shake well until emulsified.
  4. Serve immediately or store dressing separately for meal prep.

Notes

For best flavor, keep dressing separate until ready to serve. Can be customized with additional fruits or nuts.
