A comforting breakfast dish featuring crispy bacon, savory sausage, and tender potatoes, all melted together with sharp cheddar cheese for a delicious start to your day.

  • 6 slices thick-cut bacon
  • 1 pound breakfast sausage (or spicy Italian sausage)
  • 3 cups diced Yukon Gold potatoes (about 4 medium-sized)
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. In a large skillet over medium heat, cook the bacon for 8-10 minutes until crispy. Transfer to a paper towel-lined plate to drain, then crumble and set aside.
  2. In the same skillet, brown the sausage over medium heat for 5-7 minutes, breaking it up until no longer pink.
  3. Add the diced potatoes and cook for 10-12 minutes until fork-tender and golden, stirring occasionally.
  4. Combine the crumbled bacon and shredded cheese into the skillet, stirring gently until the cheese is melted, about 2-3 minutes.
  5. Serve hot, optionally topped with green onions or sour cream.
