Brie and Pear Filo Pastry Tart

A light yet indulgent tart featuring creamy brie and sweet pears in crispy filo pastry, perfect for any occasion.

Ingredients

  • 10 sheets of filo pastry
  • 10 slices of brie
  • 2 pears, thinly sliced and halved
  • 20g butter, melted
  • 2 eggs
  • 200ml double cream
  • 2 tsps thyme leaves

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Layer the sheets of filo pastry, brushing each with melted butter.
  3. Line a tart dish with the layered pastry.
  4. Arrange the sliced brie and pears in the pastry.
  5. Whisk together the eggs, double cream, and thyme leaves, then pour over the filling.
  6. Bake in the oven for 25-30 minutes until golden and set.
  7. Allow to cool slightly before serving.
