Broccoli Salad

A classic crunchy broccoli salad with bacon, cheese, and a sweet-tangy dressing that’s perfect for potlucks and summer gatherings.

Ingredients

1 head broccoli

1/2 cup mayonnaise

1/4 cup red onion, thinly sliced

1/4 cup shredded carrots

2 tablespoons apple cider vinegar

1 tablespoon sugar

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions

  1. In a large bowl, combine broccoli florets, red onion, dried cranberries, sunflower seeds, bacon, and cheddar cheese.
  2. In a separate small bowl, whisk together mayonnaise, vinegar, sugar, honey, salt, and pepper until smooth.
  3. Pour dressing over broccoli mixture and toss until evenly coated.
  4. Cover and refrigerate for at least 2 hours before serving to allow flavors to blend.
  5. Stir well and adjust seasoning if needed before serving.

Notes

  • For best texture, don’t overcook the bacon – keep it slightly chewy
  • Can substitute Greek yogurt for half the mayonnaise for a lighter version
  • Add 1/2 cup chopped walnuts or almonds for extra crunch
  • Salad keeps well refrigerated for up to 3 days
