Brown Butter Apple Cider Donuts

Delicious donuts with a nutty brown butter flavor and tangy apple cider, perfect for fall gatherings.

  • 1/2 cup unsalted butter
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar for coating
  • 2 teaspoons ground cinnamon for coating
  • 1/4 cup melted butter for brushing
  • 1/2 cup caramel sauce
  • Pinch of flaky sea salt
  • 1 to 2 tablespoons heavy cream
  • Vanilla ice cream for serving

Instructions

  1. Reduce the apple cider by simmering in a saucepan over medium heat for about 15-20 minutes until it thickens to 1/4 cup. Let it cool.
  2. Brown the butter by melting it in a small pan over medium heat until golden brown with a nutty aroma. Let it cool slightly.
  3. Preheat the oven to 350°F (175°C) and grease two donut pans.
  4. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt. In another bowl, beat eggs with brown sugar and granulated sugar until fluffy. Stir in the reduced cider, browned butter, milk, and vanilla. Combine wet and dry ingredients gently.
  5. Fill the donut pans about 3/4 full with batter and bake for 10-12 minutes or until a toothpick comes out clean. Cool for 5 minutes in the pan before transferring to a wire rack.
  6. Mix granulated sugar and ground cinnamon for coating. Brush warm donuts with melted butter and toss in the cinnamon sugar until coated.

Notes

For an even browner butter flavor, let the butter cool slightly in the pan before adding it to the mixture. Make sure not to overmix the batter.
