  • 1 pound fresh Brussels sprouts
  • 1/4 cup olive oil
  • 1/4 cup brown sugar (packed)
  • 2 tbsp Dijon mustard
  • 1/4 cup dried cranberries
  • 1/2 tsp salt
  • 1/4 cup pecans (chopped)
  • 1/4 tsp pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the stems and remove any discolored outer leaves from the Brussels sprouts. Slice them in half lengthwise.
  3. In a large bowl, whisk together the olive oil, brown sugar, and Dijon mustard until well combined.
  4. Add the Brussels sprouts and dried cranberries to the bowl and toss until the sprouts are coated.
  5. Spread the mixture on a baking sheet and sprinkle with salt and pepper. Roast for 15-20 minutes until tender and golden-brown.
  6. Once roasted, return the sprouts to a bowl, add the chopped pecans, and toss to combine.

Notes

For extra crispiness, check the sprouts at the 15-minute mark. Store leftovers in an airtight container in the fridge for up to 4 days.
