Irresistible Buckeyes: The Ultimate Peanut Butter Chocolate Treat

A nostalgic sweet treat made of creamy peanut butter center coated in rich chocolate, perfect for family gatherings and celebrations.

  • 1/2 cup unsalted butter, softened
  • 2 cups creamy peanut butter
  • 1 teaspoon vanilla extract
  • 4 cups confectioners’ sugar
  • 1/4 teaspoon sea salt
  • 12 oz semisweet chocolate chips
  • 11.5 oz milk chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Line a large baking sheet with parchment paper and set aside.
  2. Cream softened butter and peanut butter in a mixing bowl until silky smooth, about 2-3 minutes.
  3. Add vanilla and sea salt and mix until combined.
  4. Slowly add powdered sugar in 1/3 cup increments, mixing well between additions until the dough thickens enough to roll into balls.
  5. Scoop out tablespoon-sized portions, roll into balls, and place on the parchment-lined baking sheet.
  6. Insert toothpicks into each ball and refrigerate for 15 minutes to 1 hour.
  7. Melt both types of chocolate with coconut oil until smooth.
  8. Dip each ball into the chocolate, allowing excess to drip off, and place back onto the baking sheet.
  9. Chill again until the chocolate sets, about 30 minutes.
  10. Remove toothpicks and gently smooth over the holes with fingers.
  11. Serve immediately or store in an airtight container.

Notes

For easier dipping, use a fork instead of a toothpick. These treats can last up to 2 weeks at room temperature and up to 4 weeks in the refrigerator.
