Ingredients

Scale
  • 1 large head of cauliflower (about 22.5 lbs)
  • 1 cup all-purpose flour
  • 1 cup unsweetened milk (or water)
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Frank’s RedHot Original Sauce (or your favorite buffalo-style hot sauce)
  • 3 tablespoons unsalted butter, melted (or vegan butter)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Wash the cauliflower under cool water, dry it, and cut it into bite-sized florets.
  3. In a bowl, whisk together flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually add the milk (or water) until you achieve a smooth batter.
  4. Dip each cauliflower floret into the batter, shaking off excess, and place them on the baking sheet in a single layer.
  5. Bake for 20-25 minutes, flipping halfway through until golden-brown.
  6. While baking, whisk together melted butter and hot sauce for the Buffalo sauce.
  7. Toss the baked cauliflower in the Buffalo sauce until well-coated and serve immediately.

Notes

For extra crispiness, try broiling for the last 2-3 minutes of cooking. Store leftovers in an airtight container for up to 3 days.
