Irresistibly Spicy Buffalo Chicken Thighs

A delightful twist on traditional Buffalo wings featuring juicy, tender chicken thighs coated in a spicy, buttery sauce.

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup cayenne hot sauce (such as Frank’s Red Hot)
  • 1/4 cup butter (melted)
  • Black pepper, to taste
  • Optional: Garlic powder (1 teaspoon) or honey (1 tablespoon)

Instructions

  1. Pat the chicken thighs dry with paper towels.
  2. Trim any visible fat and season with black pepper.
  3. Combine the chicken with 1/2 cup of hot sauce in a bowl, marinate for at least 1 hour.
  4. Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
  5. Arrange the chicken on the tray and bake for 20 minutes, flipping halfway through.
  6. Prepare the spicy buffalo sauce by heating the remaining hot sauce and mixing in melted butter.
  7. Coat each piece of chicken in the buffalo sauce.
  8. Return to the baking sheet and bake for an additional 5 minutes.

Notes

For extra flavor, marinate the chicken overnight. Serve with ranch or blue cheese dressing for dipping.
