Irresistible Burrata Bruschetta

A decadent twist on a classic appetizer featuring creamy burrata cheese and juicy cherry tomatoes on toasted bread.

  • 1 loaf Baguette or sourdough bread (sliced into 1/2-inch pieces)
  • 1 ball Fresh burrata cheese (or fresh ricotta as an alternative)
  • 1 cup Cherry tomatoes (halved)
  • 2 tablespoons Extra virgin olive oil (plus more for drizzling)
  • 1/4 cup Fresh basil (chopped or whole leaves)
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Freshly ground black pepper
  • 1 pinch Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Arrange bread slices on a baking sheet and brush each slice with olive oil. Toast for 7-9 minutes until golden brown, flipping halfway.
  2. While bread toasts, halve the cherry tomatoes and toss with salt, black pepper, and a drizzle of olive oil. Let marinate.
  3. Remove the toasted bread and cool slightly. Tear or slice the burrata and spoon it onto each bread slice.
  4. Top the cheese with marinated cherry tomatoes, sprinkle with fresh basil, and drizzle with olive oil. Add red pepper flakes if desired.
  5. Serve immediately while warm and enjoy!

Notes

Let burrata cheese come to room temperature for the best flavor before serving. Avoid skipping the marinating step for the tomatoes.
