Perfectly Melt-in-Your-Mouth Shortbread Cookies

A simple recipe for irresistibly buttery and crumbly shortbread cookies that melt in your mouth.

  • 1 cup butter, softened
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour

Instructions

  1. Preheat and Prepare: Preheat your oven to 325°F (165°C). Line two baking sheets with parchment paper.
  2. Mix the Batter: In a stand mixer, combine butter, powdered sugar, vanilla extract, and flour. Mix on low speed until a crumbly dough forms.
  3. Shape and Cut: Turn out dough onto parchment. Roll to 1/3 to 1/2 inch thick and cut into shapes. Place on prepared sheets.
  4. Bake: Bake for 12-15 minutes, or until bottoms are lightly golden brown.
  5. Cool and Store: Cool for 5 minutes on trays, then transfer to wire racks. Store in airtight containers.

Notes

Keep cookies in an airtight container with a slice of bread to maintain moisture. They can also be frozen for up to 3 months.
