Cabbage Fat-Burning Soup: A Wholesome, Low-Calorie Delight

A flavorful and nutritious cabbage soup that supports weight loss and is perfect for meal prepping.

  • 1 medium head of cabbage, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • Salt, to taste
  • 1 tablespoon fresh parsley, chopped (optional for garnish)
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Heat 1 tablespoon olive oil in a large pot over medium heat.
  2. Add 1 diced onion, 2 chopped carrots, and 2 chopped celery stalks to the pot. Sauté for 5-7 minutes until softened and fragrant.
  3. Stir in 2 minced garlic cloves and cook for 1-2 minutes more.
  4. Add 1 chopped cabbage, 1 teaspoon ground turmeric, 1 teaspoon ground cumin, 1/2 teaspoon black pepper, and 1/2 teaspoon paprika. Stir well to coat the cabbage.
  5. Pour in 4 cups vegetable broth and 1 (14.5 oz) can diced tomatoes. Stir and bring to a simmer.
  6. Cover the pot and cook for 25-30 minutes until the cabbage is tender.
  7. Adjust salt to taste and add 1 tablespoon lemon juice if desired.
  8. Serve warm, garnished with fresh chopped parsley if using.

Notes

Store leftovers in an airtight container in the fridge for up to 7 days or freeze for up to 3 months. This soup is perfect for meal prep and can easily be customized with additional vegetables or proteins.
