Cabbage Fat-Burning Soup

A wholesome and irresistibly delicious low-calorie soup packed with fiber-rich vegetables and flavorful spices.

Ingredients

  • 1 medium head of cabbage, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • Salt to taste
  • 1 tablespoon fresh parsley, chopped (optional for garnish)
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat.
  2. Add diced onion, chopped carrots, and chopped celery and sauté for about 5-7 minutes until softened.
  3. Add minced garlic and cook for 1-2 minutes.
  4. Add chopped cabbage, turmeric, cumin, black pepper, and paprika. Stir well.
  5. Pour in vegetable broth and add diced tomatoes. Stir and bring to a simmer.
  6. Cover the pot and let it simmer for 25-30 minutes until the cabbage is tender.
  7. Season with salt and stir in lemon juice if desired. Serve warm, garnished with parsley.

Notes

Store leftovers in an airtight container for up to 5 days, or freeze for up to 3 months.
