  • 6 anchovy fillets (minced)
  • 3/4 cup mayonnaise
  • 6 tablespoons grated Parmesan cheese (divided)
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 3 cups of cubed white bread
  • 1 head of Romaine lettuce (sliced into bite-size pieces)

Instructions

Make Croutons: Toss bread with oil, garlic, S&P. Bake at 375°F for 10-12 mins until golden.,Make Dressing: Whisk all dressing ingredients until smooth.,Assemble: Toss romaine with dressing, croutons, and shaved Parmesan.,Serve: Add extra Parmesan and fresh cracked pepper on top.
