  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions

  1. Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente (about 10-12 minutes). Drain and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, cooking for about 5-7 minutes until softened.
  3. Add the sliced chicken breast to the pot and season with Cajun seasoning, salt, and pepper. Cook for 5-7 minutes until the chicken is browned and cooked through.
  4. Stir in the heavy cream and chicken broth, bringing to a gentle simmer and stirring until the sauce thickens slightly (about 3-4 minutes).
  5. Add the drained penne to the pot, mixing everything thoroughly. Let it soak in the sauce for another 2-3 minutes.
  6. Serve hot, topped with freshly grated Parmesan and chopped parsley.
