  • 6 medium apples (Granny Smith or Fuji recommended)
  • 2 cups granulated sugar
  • ¾ cup water
  • ½ cup light corn syrup
  • 1 tsp vanilla extract
  • ½ tsp red food coloring (optional)
  • 6 wooden sticks

Instructions

  1. Wash and thoroughly dry apples. Remove stems and insert wooden sticks firmly into stem ends.
  2. Line baking sheet with parchment paper and grease lightly.
  3. In heavy saucepan, combine sugar, water, and corn syrup. Stir just until sugar dissolves, then stop stirring.
  4. Cook over medium-high heat until mixture reaches 300°F (hard crack stage) on candy thermometer (about 20-25 minutes).
  5. Remove from heat. Carefully stir in vanilla and food coloring (if using) – mixture will bubble vigorously.
  6. Tilt pan and quickly dip each apple, swirling to coat completely. Allow excess to drip off.
  7. Place on prepared sheet. Let cool completely until hardened (about 30 minutes).
