  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1 1/2 cups whole milk ricotta cheese
  • 1 cup mascarpone cheese, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 3/4 cup mini semisweet chocolate chips
  • Extra mini chocolate chips and chopped pistachios for garnish
  • Powdered sugar for dusting
  • Whipped cream for serving

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until it resembles wet sand.
  3. Press the mixture into the bottom and sides of a 9-inch pie pan. Bake for 8–10 minutes or until lightly golden, then set aside to cool.
  4. In a large bowl, beat together ricotta, mascarpone, and powdered sugar on medium speed until smooth. Add vanilla, cinnamon, and salt. Fold in mini chocolate chips.
  5. Spoon the cannoli filling into the cooled crust and smooth it out. Cover and refrigerate for at least 4 hours, ideally overnight.
  6. Before serving, top with extra chocolate chips, chopped pistachios, and a dusting of powdered sugar. Drizzle with whipped cream.
  7. Slice into squares and serve.

Notes

Ensure the butter is melted and slightly cooled before mixing. Drain the ricotta if it is watery for a firmer filling.
