Ingredients

Scale
  • For the crust:
    • 4 cups all-purpose flour
    • 1 3/4 cups cold butter, cubed
    • 1 tbsp granulated sugar
    • 1 tsp salt
    • 1/2 cup ice water
  • For the filling:
    • 8 large Granny Smith apples, peeled and thinly sliced
    • 1 cup granulated sugar
    • 1/4 cup all-purpose flour
    • 2 tsp ground cinnamon
    • 1/4 tsp ground nutmeg
    • 1/4 tsp salt
    • 1 tbsp lemon juice
    • 1 cup caramel sauce (plus extra for drizzling)
  • For topping:
    • 1 egg, beaten (for egg wash)
    • 2 tbsp coarse sugar

Instructions

  1. Make the crust: In a food processor, pulse flour, sugar and salt. Add butter and pulse until mixture resembles coarse crumbs. Gradually add ice water until dough comes together. Divide in half, flatten into discs, wrap in plastic and refrigerate for 1 hour.
  2. Prepare filling: Toss apple slices with lemon juice. Mix sugar, flour, cinnamon, nutmeg and salt in a large bowl. Add apples and toss to coat.
  3. Assemble: Roll out one dough disc to fit a 15x10x1-inch jelly roll pan. Transfer to pan. Spread 1/2 cup caramel sauce over crust. Add apple mixture, then drizzle with remaining caramel.
  4. Top pie: Roll out second dough disc and place over apples. Crimp edges to seal. Cut vents in top. Brush with egg wash and sprinkle with coarse sugar.
  5. Bake: At 375°F (190°C) for 45-55 minutes until golden brown and bubbly. Cool 30 minutes before serving.
  6. Serve: Drizzle with additional caramel sauce. Cut into squares and serve warm.
