Easy Creamy Carrot Ginger Soup

A vibrant and comforting Carrot Ginger Soup with a creamy texture and a perfect balance of sweet carrots and zesty ginger.

  • 1 tablespoon grated fresh ginger
  • 1 onion, chopped
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: Cream or coconut milk for serving

Instructions

  1. In a pot, heat the olive oil over medium heat until shimmering, about 2 minutes.
  2. Add the chopped onion and sauté until translucent and slightly golden, about 5 minutes.
  3. Toss in the chopped carrots and grated ginger, and sauté for an additional 3-4 minutes.
  4. Add the vegetable broth and bring to a boil, then reduce heat and simmer until the carrots are tender, about 15-20 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Season with salt and pepper to taste.
