Heavenly Carrot Spice Cake

A moist and flavorful carrot spice cake layered with cream cheese frosting, perfect for any special occasion or cozy afternoon treat.

  • 1 3/4 cups (220g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger

  • 1/8 tsp ground cloves
  • 3/4 cup (150g) light brown sugar
  • 1/2 cup (100g) granulated sugar
  • 3/4 cup (180ml) vegetable oil
  • 3 large eggs, room temperature
  • 2 cups (200g) finely grated carrots (about 3 medium carrots)
  • 1/2 cup (50g) chopped walnuts or pecans
  • 1/2 cup (80g) raisins (optional)
  • 1 tsp vanilla extract
  • For the Cream Cheese Frosting:
  • 8 oz (225g) cream cheese, room temperature
  • 1/2 cup (115g) unsalted butter, room temperature
  • 2 cups (240g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In another bowl, whisk together the brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  5. Fold in the grated carrots, nuts, and optional raisins.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, or until a toothpick comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the frosting, beat the cream cheese and butter until smooth, gradually adding powdered sugar, vanilla, and salt until fluffy.
  9. Frost the cooled cake generously and top with toasted walnuts if desired.

Use fresh, organic carrots for the best flavor. Room temperature ingredients help achieve a fluffier texture.
