Chai Spiced Pumpkin Cookies

Deliciously soft and chewy cookies infused with warming chai spices and pumpkin, perfect for fall.

  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup neutral oil or melted unsalted butter
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • A pinch of finely ground black pepper (optional)
  • 1/2 cup chocolate chips, white chocolate chunks, or toffee bits
  • Maple glaze or cream cheese frosting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a large bowl, whisk together pumpkin puree, brown sugar, oil (or melted butter), egg yolk, and vanilla extract until smooth.
  3. In another bowl, stir together flour, baking soda, baking powder, salt, and all the spices.
  4. Gradually fold the dry mixture into the wet ingredients, being careful not to overmix.
  5. Cover the dough and chill it in the fridge for 30 to 60 minutes.
  6. Scoop the dough onto prepared baking sheets, leaving space between cookies.
  7. Bake for 9 to 11 minutes, until the edges are set and centers look slightly underdone.
  8. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  9. Once cool, drizzle with maple glaze or spread with cream cheese frosting if desired.
